Cook's knives: Kiritsuke "Eligio", san mai with damask 67 layers, AUS10V steel cutting edge, 60 ± 2 HRC hardness.
The Kiritsuke is an original Japanese knife form that combines, in part, the characteristics of the Santoku and the western chef's knife; it is suitable for slicing, chopping or cutting into pieces vegetable, fish and meat, or making beaten.
The here proposed "Eligio" version has a Damascus San Mai blade 67 layers and a G10 handle. Dimensions: total length 335mm, blade length 200mm, average blade thickness 2 mm, cutting length 198mm, handle length 130mm, weight 240gr. Packaging: cardboard box. Made in China by DTYT.
