Swiss Made cheese knife from the novel surgical steel 1.4123 (Chronifer M-15 KL) with the hardness of 58 HRC.


Item S-102E Cheese knife. Handle made of stabilized black colored ash. Total length 230 mm, blade 130 mm. Packaging: cardboard box. Shades and natural streaks may be different from that reproduced on the image.


 


SKnife Swiss Knife' design is formed by close cooperation with first class cuisine and knife specialists in Switzerland. The flowing transition from the handle to the blade allows ergonomic cutting. Due to the optimized design the cut surface has no contact to the surface.
The surgical steel was primarily developed for Airbus and is today used in surgery for highly loaded parts – as bone screws – as well as in watchmaking. Throughout the fine structure a very high durability can be achieved and therefore the grind of the knife is much thinner. By replacing carbon with nitrogen it increases the corrosion resistance by factor four. Thanks to high hardness of 58 HRC, which is in the range of the Japanese knives, the knife stays sharp for a very long time.
Swiss wood: the walnut as well as the ash tree wood with its beautiful wood structure are both from a wood turnery in Graubünden. To make the wood durable it is infiltrated with a 100% acryl to get stabilized - this under vacuum and pressure. This procedure also changes the color of the wood. This technology is based on the latest research results from development projects together with the University of Applied Sciences in Biel.
